INGREDIENTS:
9 cl Lambrusco di Sorbara
4 cl London Dry Gin
2 cl Red Vermouth
2 cl Apricot Brandy
1 teaspoon sugar
PREPARATION:
In a shaker put all the ingredients except the wine. Strain into a glass and fill it with Lambrusco. Garnish with a slice of apricot and a cherry preserved in alcohol. Serve.

INGREDIENTS:
3 cl essence of Lambrusco di Sorbara*
7 cl sparkling Pignoletto
PREPARATION:
Pour the essence of Lambrusco in a flute. Fill with Pignoletto. Decorate with a cocktail cherry or some berries. Serve.
*To make the essence of Lambrusco, pour the contents of a bottle of Lambrusco in a saucepan and heat it. Reduce to approximately a tenth of its original volume. Add sugar to correct acidity. Add a small amount of pure alcohol.
LAMBRUSCO COOLER
INGREDIENTS:
pink grapefruit zest
2 teaspoons of white cane sugar
5 cl Lambrusco di Sorbara
5 cl soda water
PREPARATION:
Crush the citrus zest, sugar and a little Lambrusco in a pestle. Pour it, without filtering, into a glass filled with crushed ice. Pour in the rest of the wine and add the soda water. Garnish with a slice of pink grapefruit. Serve.
